My Salad Quest: Taco Salad

Sundays are Taco Salad Day.  I prepare everything in the morning before church, so when we're home and hungry, we simply pull out the ingredients and make salads!  Here is a list of the ingredients I prepare: Romaine lettuce Mixed greens Cilantro Kidney beans Cherry tomatoes Chopped avocado Crushed tortilla chips Salsa A healthy ranch dressing Other not-so-healthy ingredients we enjoy: Ground beef, browned w/ taco seasoning added Grated cheese In large bowls, assemble salads … [Read more...]

Strawberry Toasted Pecan Chicken Salad

All I have to say is... OH, YUM. :) 2 c. roasted chicken breast, chopped 1/4 c. toasted or sprouted pecans 2 c. hulled and quartered strawberries 1/4 c. finely diced red onion 1/4 c. finely diced celery 1/4 c. finely chopped cilantro leaves 2 T. Balsamic or white wine vinegar 2 tsp. olive oil 4 c. salad greens Combine all ingredients except salad greens. My Salad Quest

We've had a good start on our journey to better health, and I am hoping it will continue!  I've been making fresh juice, green smoothies, and salads.  I ran across a video the other day showing a method for making salad I hadn't seen before.  I decided to give it a try, and we love it!  The preparation went by quite fast, and because the veggies are chopped up small and mixed together, it was easier to eat.  The flavors were mingled together perfectly.
