Homemade Granola

And pumpkin seeds... aren't they beautiful?

I love granola but prefer homemade to the store bought stuff, so I haven't had it for a while!  Today I decided to make a double batch.  I bet it's been at least a couple of years since I've made granola. It's really not difficult, and the recipe can be adapted to include whatever you like or have on hand. Here's what I came up with … [Read more...]

Cheesy Kale Chips

Kalechips2

Okay, I know what you're thinking.  Kale Chips?  Yuck.  Well, I guess these are just something you'd have to experience to know how yummy they really are.  I made them once before, and they were very good, but this last recipe I tried is a winner.  They have no real cheese at all, but have a cheesy flavor from the combination of ingredients.  Carl says they are addictive, and he ate almost a whole dehydrator tray of them!  Let me tell you how I made them... He's using a Vitamix blender, which is very expensive, but don't be afraid to try it in a regular blender.   And just so you'll know... Nama Shoyu is raw soy sauce, and it's SO yummy. Whitney prefers the taste over any other soy sauce or tamari we've had.   All of the unfamiliar products he mentions can be found at a good health food store or online. Look how easy it is to make a super … [Read more...]

I know I've been a little quiet on my blog lately -- lots going on since my hubby lost his job.  I've been wanting to write about my sauerkraut making, and so here I am!  I found online a contraption for making it, and ordered one several weeks ago.  I've been reading online about fermented (cultured) foods, and how healthy they are, and so I was determined to give sauerkraut a try.  It turned out so delicious!  We call it "Happiness" because it makes us happy to eat it!  I wish you could taste … [Read more...]
