My Hubby’s Lunch

We’ve been doing pretty well with the green smoothie challenge. Last weekend got us off track and I need to do better. During the week I have more success since I have a routine in place. We’re going to keep at it!

Thought I’d share a quick post to show what I packed for my hubby’s lunch today.

I pack Carl a sandwich every day, either with this or with wholegrain bread slices.

It has chicken, american cheese, cucumber, tomatoes, yellow pepper, a little cinantro, salt and pepper. Oh yea, and mayo. I'd like to make his sandwich healthier by replacing the mayo with a homemade dressing, and replacing the cheese with something else... maybe sauteed onions and peppers for flavor so he won't miss the cheese.

Today it has rotisserie chicken, American cheese, cucumber & tomatoes from our garden, yellow pepper, a little cilantro, Real Salt and pepper. Oh yeah, and Duke’s mayo, which I love but don’t like to use. Carl loves peanuts so I always pack him some, with raisins. He likes the protein for an afternoon snack.

And he now takes a smoothie! I'm not sure when he drinks it during the day, but he's drinking it! My guess is mid-morning.

And he now takes a green smoothie! I’m not sure when he drinks it during the day, but he’s drinking it! My guess is mid-morning.  I put the smoothie in a squeeze bottle (from Sam’s Club) with the tip cut off some.  It’s great for portability and isn’t messy at all.  This is how I drink my smoothie every day.  Whitney thinks it’s gross (she prefers a glass and a straw), but we love it! :)

Here's everything: His smoothie, sandwich, peanuts & raisins, a banana, and some baby carrots. I also make him a travel mug of organic fair trade coffee from Trader Joe's.

Here’s everything I came up with for today: His smoothie, sandwich, peanuts & raisins, a banana, and some baby carrots. I also make him a travel mug of organic fair trade coffee from Trader Joe’s.  My friend Darlene told me about the coffee… it’s wonderful and doesn’t cost any more than the coffee we were drinking before.

Well, that’s it!  Just sharing.  Have a blessed day. :)
